Jay Rayner Congratulates Stephen Harris of The Sportsman (a pub by the sea, in Kent, UK) on his freshly delivered 1st Michelin Star at Word of Mouth
You have to praise someone who Jay Rayner tells us "makes salt from buckets of water lifted from the shore. He uses it to cure pig legs from animals fed on the left-overs from the kitchen, to make his own Serrano-style ham. He makes elderberry sorbet from the tree in the garden. Anyone who has tried his crab risotto or his turbot dishes will know just how good he is, and will also delight in the lack of flummery at the Sportsman. This is a real pub, with linen-free tables and beer on tap."
The man even shows imagination on the restaurant homepage (beach cabanas).
I would not mind treating myself to the wonderfully appetizing fish dish that graces the menu page or some of the oysters.
They took over The Sportsman in 1999.
Makes me want to pay a visit to Kent, sit on the patio (my picture), eat and play checkers.
