I had to mention Seth Mydans story Street Food Singapore (Globespotters).
It fits prefectly in the Consumed to Thrifty idea.
He tells us that "Singapore stands out for its low-end food – hawker food, it’s called, even though most
of the hawkers have been moved indoors to food courts. Orderliness is
big in Singapore. This (indoor) street fare is mostly a mix of the
country’s dominant ethnic cuisines, Chinese and Malay as well as
Indian".
Seth mentions Free Range Chicken being served and something I never tried Coffee-flavored Pork Ribs.
You can find similar street food in neighboring Penang (Malaysia) as the Penang Hawker Food Blog proves.
Their photo (my illustration) of ‘Making Roti Jala‘ (by Tidaknama) reminds me of Creperies in Brittany.
The burner slash pan looks quite similar to those used in my native region to make crepes and galettes.
