Pleased to meet you Mr. Stinky, the Cheese Guy from Brooklyn!
Real name is actually Patrick Watson.
He was offering a taste of some of the cheeses that Stinky bklyn loves and sells at the Polaner Wine Tasting on March 25th at Gotham Hall in New York.
In these tastings that offer wines in the hundreds, taking a breather and getting a bite here and there is salutary.
We started with the Brie de Nangis (from France), followed by Tumbleweed from 5 Spoke Creamery in Pennsylvania. They describe it as "a cross between a Cantal Fermier (Le Salers) and aged Cheddar".
We then moved to Spain or more precisely the Basque country for Idiazabal (pictured above) a lightly smoked hard sheep cheese with its own DOC. Last was a blue cheese whose name I missed.
Stinky bklyn claim to fame is that they are one of the rare cheese shops in New York to do affinage.
This guarantees ripe cheeses which will reveal all their flavors.
Unfortunately their website could be best described as undevelopped so you will not learn much from it about their offerings.

I plan on making a trip there for more cheese regalia and a look at their cave (d'affinage)…
