Who's the big cheese running the show in the Sud de France stand at Salon International de l'Agriculture in Paris (February 27, March 7, 2010)?
The man is Gerard Petit, cheesemaker by trade and ambassador of creations of Lozere such as the Pelardon which celebrates its 10 years as an AOC cheese.
Mister Petit raves about the creaminess and freshness of the Pelardon (pictured below).
He also raves about the Parpaillotte, a goat cheese like the Pelardon produce by the Co-op of Moissac-Vallée-Française.
Alsoon his list his a blue cheese, Bleu des Causses from Malzieu.
Where did I learn all this? In Gérard Petit en fait tout un fromage (Midi Libre. March 5) by Luc Crespon-Lherisson.
I did not realized until I read Pélardon de Cevennes (August 2006, Lucy's Kitchen Notebook) that this cheese has been produced since 100 BC.
