Our friend Pascale of C'est moi qui l'ai fait (French Food Blog, in French) gives a couple answers as to how, where, when to go in Paris to sample wines without breaking the bank while keeping things fun.
One of her suggestions is Spring, not the restaurant which is currently closed but the Spring Boutique 'Epicerie Fine' that Daniel Rose opened. It carries a small selection of wines curated by Daniel.
A few times a month, Pascale reports, Daniel organizes wine tasting sessions costing from 5 to 20 euros with small food bites so you don't get tipsy. When possible the winemaker is there to answer your questions.
You might even meet interesting people.

I especially noticed a Vacheron Sancerre Rosé , never tried it.
