After Dinah, his first cheese, starred on the cover of Culture magazine's Autumn 2010 issue, Kurt Timmermeister of Kurtwood Farms on Vashon Island (Washington State) shares with a few pictures how he built a naturally cool cave to age his second creation.
Named Francesca, it's a twelve month aged Italian-style, nine pound hard cheese.
The first wheels should be available in August 2011.
