It must be a week for pigs and i don't mean those with bad manners or dirty old men.
I mean the animals and the lovely food they become.
I never thought i would one day find pigs could look cute as those featured in my Growing a Farmer Interview with Kurt Timmermeister do.
Pigs will be center stage at Cochon 555, 5 pigs, 5 winemakers, 5 chefs whose 2011 American Tour will kicks off in New York from January 21 to January 23.
The concept:
"A group of chefs will each prepare a 150-175 pound heritage breed hog from head to toe for this friendly competition. Guests and local judges will determine a winner based on presentation, utilization and overall best flavor. In addition, five selected winemakers will showcase their wines. COCHON 555 is a tribute to heritage and heirloom breeds, chefs and winemakers."

This 3rd US Cochon 555 Tour then moves on to Boston (January 30), Seattle (February 20), Napa (March 6), Washington DC (March 13), Chicago (March 20), Denver (April 3), Los Angeles (May 1), New Orleans (May 28) and San Francisco (June 5) with I guess different pigs, chefs and wineries in each city.
Is it Mangalista or Mangalitsa by the way? I am confused.
