I noticed 2 weeks too late the Guided Coffee Tasting: Brewing Moments of Clarity through Nel Drip Coffee with Nahoko Yamaguchi at Japan Society on October 5th.
Nahoko Yamaguchi published A Daibo Coffee Manual (2024) by Katsuji Daibo via her Nahoko Press.
Katsuji Daibo owned Daibo Coffee in Tokyo for 4 decades
His approach to coffee described by Japan Society as “inspired by the aesthetic principle of Shizukesaya—a sense of serene stillness—an invitation to pause and savor a moment of quiet joy through the thoughtful preparation and enjoyment of coffee” is in stark contrast with the cup of java often grabbed on the go for a quick caffeine kick, here in the USA.
Stillness and coffee are not part of our American cultural landscape.
Japan Society event page offered that “each cup is a reflection of Daibo’s philosophy: to create a space where one might “shed their armor and return to their true self, in the most peaceful way possible, even though the taste of coffee should fulfill that role.”

Shizukesaya meaning from what I gathered is stillness, quietness, tranquility, serenity.
