I did not realize until I saw the picture below (from Alaska Fisheries Science Center) that "Pacific halibut is the largest flatfish known, with females living 40
years or more and reaching 2.5 m and 300 kg. Males are smaller (1.5 m)
and have shorter maximum life spans, near 25 years" (same source).
There is not much to waste in it according to Halibut, America's favorite fish (Fishex). They note that it also yields "roundish cheeks which are extracted from their head area. Halibut cheeks are sweet flavored and are considered a delicacy", never tasted these tender cheeks.
On size and trivia, they also write that Halibut "can grow to more than 8 ft long and 700 lbs. Halibut weighing in at more than 100 pounds are often called "Whales", "Soakers", or even
"Barn Doors", while smaller halibut, less than 20 pounds, are often
called "Chickens".The largest halibut ever caught while sport fishing was 459 lbs. in Unalaska Bay ."
I believe it is now in season, so Poisson d'Avril.
