Fish Surfing in Hawaii with UKU

Yesterday, I had my first encounter with UKU otherwise known as Grey Snapper or Jobfish.
This UKU came to us from Hawaii. It is caught year round but its peak season is May to July (its spawning season) and most of them weigh from 4 to 18 pounds. The Summer catch is fattier which makes it good for use in sashimi.

While checking on my new found fish friend, I also learned that what Hawaiian call Shutome is actually Swordfish.
