I was already familiar with Purple Haze ( a goat cheese) but I just discovered Lamp Chopper the only sheep’s cheese to ride a Harley and be tagged ‘born to be mild’. 
It is a collaboration between Cyprus Grove and a Dutch Gouda maker, made in Holland and produced in 10 pound wheels.
This 100% organic cheese is semi firm and with medium flavors, not overpowering. Read the review from Janet Fletcher in the San Francisco Chronicle (January 04).
