I just added another stop on my Chocolate Show munching list.
With one day to go before my visit, I found out that there is actually Life on Mars.
Except this Mars is a small town in the Loire department of France where the founder of Pralus, the French Chocolatier was born.
They started as a Patissier Chocolatier as the vintage postcard below (from their site) shows:
In a quick introduction, here is how they describe themselves:

Pralus is one of the rare chocolate-makers (only three
exist in France!) whose belief in the Aztec God Quetzalcoatl
inspired the creation of his own chocolate.
In order to concoct the quintessential aromas and original
bouquets, each “marriage” of chocolate is blended
and refined in his Laboratoire Chocolat, set up in 1991.
Hailing from the finest Criollo, Trinitario and Forastero, François Pralus
imports no less than eighteen different varieties of bean – from Central America,
South America, Madagascar, Sao Tome and Principe and Indonesia – for his blends.
Some of which contain eighty percent cocoa."
