Globetrotting French butcher Yves-Marie Le Bourdonnec of Le Couteau d'Argent will share his savoir faire as the guest of Tom Mylan at The Meat Hook in Brooklyn, New York from October 31st to November 4, 2010.
As far as I can tell from the highlights on French site L'Hotellerie Restauration, Yves-Marie will be teaching the art and technique of the French Cut to a group of 10 Americans.
He will also use his visit as an opportunity to meet people raising grass fed cattle.
What's worse than a tasteless steak?
