As I was giving another unfortunate try at a clutter free office, Chef Says: Japanese Knives are the BEST, a why and how to session with chef Michael Romano at Japan Society in New York on November 9, 2010 surfaced.
This event starts at 6:30 PM sharp and is co-organized by Gohan Society (sponsored by Sakai City).
In Chef's Knives made in Sakai-city by Iida Tool, I learned that the knife making tradition there goes back to the 15th century. No mass produced items in that case. Just looking for the sharpest, finest help a chef can look for.
