In my incessant search for colorful, natural and exotic ingredients besides White Strawberries and the Okinawa Purple Sweet Potatoes, I strayed from the Melon de Cavaillon and stumbled upon none other than Foo Qua, a California grown Bitter Melon often served stuffed with shrimp or pork in Dim Sum restaurants. Its bitterness comes from its high Quinine level which must explain why it was used as a medicine.
Will the Purple Potatoes taste good with the Red Chicken ( or Poulet Rouge in french)? Like Wagyu (Kobe) beef, these Fermier Chicken now raised in Piedmont (not Italy but North Carolina) to organic standards by amongst others Ashley Farms offer a better balance between meat and marbling (good fat content).
