A carpenter needs good tools and materials to do the job right.
A home cook, a home meal requires some imagination and the right ingredients.
After a long day working, I might not have the stamina to cook up a storm.
There is always pasta or couscous in my cupboard.
I was recently the lucky recipient of Homemade Style Wide Egg Noodles and Homemade Style Egg Pasta by family owned Country Pasta from Polson, Montana.
I used both for meatless dishes, in one case just the noodles with tomatoes, basil and a dash of shaved grana, in the other with sauted zucchini, eggplant and spices.
No 5 minutes cooking for these pastas. Count 15 to 18 minutes. What matters is in the end the noodles were still firm and flavorful.
These noodles will be perfect for a beef stroganoff dish or with bay scallops in a tarragon sauce.
Dean and Linda Knutson created Country Pasta 20 years ago. It all starts with 100% durum semolina then add farm fresh eggs, fresh water and sea salt…Dean passed away 5 years ago…His wife and daughters stick to the roots of their success.
Thanks to the Knutson family for reminding me of what real pasta tastes like.
