For his new book The Family Meal (Phaidon Press, 2011), Ferran Adria put together some of the recipes for dishes served over the years at El Bulli for staff meals.
Before touring the U.S to promote his new tome, Ferran Adria visited Google European HQ in London on September 27 to join in the celebrations of Google turning 13.
The Google canteen offered some of the recipes from The Family Meal at lunch time including sesame crusted sardines with grilled baby gem and carrot salad and saffron and spinach risotto.
If you want to emulate Google's example and serve some of Ferran's family dishes at work, here's the first of two recipes I will share from The Family Meal.
Bread with chocolate and olive oil
Bread with chocolate is a popular dessert in Catalonia. When we cook it at elBulli, we add extra-virgin olive oil and sea salt.
Serves 6
Ingredients
6 oz dark chocolate, 60% cocoa
6 slices 1-lb white country-style loaf, cut into 8 slices
¼ cup extra-virgin olive oil
½ tsp sea salt flakes
Preheat the oven or boiler to approximately 325°F. Coarsely grate the chocolate onto a plate. Place the bread on a baking sheet or heatproof plate. Toast under the broiler until golden on both sides. Spoon the grated chocolate over the toast, covering it completely. Pour the olive oil over the chocolate and sprinkle with the salt flakes.
