No eggs needed, vanilla a must for this Easter Egg Smash Cake recipe that landed in our e-mail box courtesy of our good friends at Heilala Vanilla in New Zealand.
Base
1 ½ cup flour
1 ½ cup coconut
1 tsp baking powder
125g melted butter
¼ cup Heilala Vanilla Syrup
1 tsp Heilala Vanilla Paste
Mix all together and push into sponge roll tin
Bake 15-18mins at 180 degrees
Allow to cool
2 tbsp gelatine
1 ¾ cups sugar
¼ cup Heilala Vanilla Sugar
1 ½ cups water
1 tsp Heilala Vanilla Extract
Combine all ingredients in a pot and stir on a medium heat until sugar is all dissolved.
Allow to boil on gentle heat for 7 – 8 mins.
Cool to room temperature .
Once cool, beat in electric beater until thick, white, glossy and double its size.
Pour over base and allow to set.Ice with melted chocolate or ganache.
