Quiche in a Suitcase
One of my oldest friends, Jenny, lives near Borough Market in London, just close enough to smell the charred chorizo and indulge in a roast pork roll more often than necessary.
During one morning spent there I talked to a baker about the possibility of making a quiche within a hollowed loaf, rather than pie dough. Could it be done? Yes it can.
Prep time: 15 minutes • Cook time: 1 hour
SERVES 8
1 large boule of bread, approx. 10-inch round and 13/4 pounds in weight
6 medium free-range eggs
11/4 cups heavy cream
1 heaping cup shredded sharp cheddar cheese
12/3 cups cherry tomatoes, halved horizontally
2 cups coarsely chopped basil
Sea salt and freshly ground black pepper
1 Preheat the oven to 325°F. Cut about a third off the top of the loaf of bread to give a depth of 21/2 to 31/4 inches for the filling.
Hollow out the inside by removing 90 percent of the crumb, but be careful not to make the shell too thin or it might not stand up to the filling; about 1/2 inch thick is perfect. (Now what could you do with the inside? Bread sauce, croutons, or see page 33 for a quick panzanella.)
2 Crack the eggs into a medium-size bowl and lightly beat with a fork. Then simply pour in the cream and add two-thirds each of the cheddar, tomatoes, and basil. Season heavily.
3 Pour into your suitcase. There should be about a 1-inch clearance from the top of the mixture to the lip of the bread. Dress the top of the mixture with the remaining cheese, tomatoes, and basil. Give a good grinding of black pepper and bake for 1 hour, or until the filling is firm to the touch. Turn off the oven and let the quiche cool inside. To serve, simply slice into wedges.
