Shortly after Noma was voted Best Restaurant in the World, Chef Rene Redzepi of Noma Made Time for our 5 Question Interview.
Nicole Stich and Oliver Seidel, co-authors of delicious:days were offered the opportunity fo follow Rene and his team for a day in the life of Noma and share the experience in A Sense of Place just published (October 5th, 2010) via Nowness.
Make sure you take the time to view all slides illustrating 'A Sense of Place'….Does not feel hurried and hectic as many restaurant kitchens do. It shows people moving at a steady pace, going about their work.
Want to experiment in your very own kitchen, try the Take Away Recipe of Pork Neck and Bulrushes with Violets and Malt excerpted from Noma, the Book (Phaidon) .
Rene Redzepi is touring the US and Canada to celebrate the publication of his book.
His stops include Mistral Kitchen in Seattle on Tuesday, October 5th at 6PM and New York Public Library on Wednesday, October 6th at 7PM. New York event is a discussion with David Chang moderated by Ruth Reichl. You need to buy tickets for both….
I knew next to nothing about Nowness until yesterday. The site celebrate creativity in all its forms.
Thanks for this — I had not heard of Nowness before your post! I first learned of Redzepi because he used the super kitchen machine called Thermomix. If your readers want more about Redzepi (recipe, video, and Noma cookbook contest coming soon) they’ll find some interesting material at http://SuperKitchenMachine.com
Cheers,
Helene

I never used a Thermomix Machine and was not aware that Rene Redzepi was a master user either.
Maybe I will have a chance to see it (or show it) in action one of these days.
I just secured the use of a professional kitchen to document such things with photos or videos.
