No week passes by without fish for dinner at my table.
My first poisson d'Avril (no April Fools) was Rockfish which happened to be on sale (as filets) at my local Whole Foods this past week-end.
I was not familiar with Rockfish so I asked the fish guy for some background on Rockfish and he compared it to Red Snapper which according to How to Cook Rockfish by Hank Shaw (About.com) is a common mistake.
I baked this firm and mild fish with only a bit of lime and fresh herbs.
It takes only 10 to 12 minutes to cook so good to fix a quick meal with couscous or quinoa and asparagus or string beans.
Hank Shaw suggests Rockfish as good for ceviche.
According to Wikipedia, "Sebastes is a genus of fish in the family Sebastidae (though some include this in Scorpaenidae), most of which have the common name of rockfish" most found on the Pacific Coast and plentiful.
Which of the 70 variety of rockfish landed in my plate?
I don't know.
